Acting as a sous chef on duty you will be the key liaison between the Head Chef and the kitchen team. This role represents a fantastic opportunity for an ambitious and career focused chef to take the next step and become part of a company renowned for quality menus and exceptional standards.
MAIN DUTIES:
- Support the Head Chef in the running of daily operations, whilst ensuring the highest standard and quality of service is being consistently delivered
- Have a good command of the menu and the ingredients required
- Communicating daily specials and other important information between the kitchen and other departments
- Oversee kitchen preparations
- Ordering and stock control
- Assist with other senior management to produce exquisite dishes, and exciting new concepts to contribute to daily specials, menu planning and seasonal changes
- Maintain strict health and safety and food hygiene standards
- Writing detailed handover reports for the senior management team
- Manage the kitchen team and moral of the staff
REQUIREMENTS:
- Previous experience as a Sous Chef or above within a 5 star hotel or luxury restaurant with 3+ years of experience
- Knowledge of a variety of local and international food ingredients and correct methods of preparation
- Excellent communication skills
- Excellent team working skills
- A passion for food and a creative flair
- Superb attention to detail and driven by delivering exceptional standards
- Strong leadership and motivational skills which are capable of nurturing, developing and inspiring staff
- Resilience and drive to get things right the first time
- Ability to forecast and project

Working closely with the team, and taking instruction from the Senior Sous Chef and Head Chef, your main responsibility is to ensure exceptional standards and a high quality for each dish is delivered. You will experience a rotation of the kitchen, spending time in each section to help with your development and knowledge of our kitchen.
MAIN DUTIES:
- Run daily operations of the kitchen
- Have a good command of the menu and the ingredients required
- Support the senior members of the kitchen team to create exquisite dishes that maintain Firmdale standards and continue to exceed our guest expectations
- Guide and oversee the kitchen team in their delivery of service and development
- Deliver orders in an efficient time
- Maintain strict health and safety, and food hygiene standards
- Mise en place and stock control of your section*
REQUIREMENTS:
- Previous experience as a Chef de Partie within a 5* hotel or luxury restaurant
- Knowledge of a variety of local and international food ingredients and correct methods of preparation
- Excellent communication skills
- Excellent team working skills
- Superb attention to detail and driven by delivering exception standards
- Demonstrate a flair for producing exquisite dishes, and coming up with new and exciting concepts to contribute to menu planning and seasonal changes
- A passion for food
