Recipes - Teriyaki Salmon

teriyaki SALMON 

For two people 


  • 2 portions of salmon
  • Teriyaki sauce (please see recipe below)
  • 200g basmati rice
  • Spring onions
  • Chives
  • Three cornered leeks
  • Dried chilli flakes
  • Sesame seeds


  1. Preheat the oven to 200 degree Celsius
  2. Marinate the salmon in a splash of the teriyaki sauce for 20 minutes
  3. Wash the rice until the water is clear, then cover with cold water and add a little salt. Bring the rice to the boil and then simmer until the rice is cooked
  4. About 5 minutes before the rice is cooked, place the salmon in a heavy ovenproof dish then put in the oven for 5 minutes. Turn the oven off and leave the salmon while you plate up
  5. Plate the rice and cover with the chopped spring onions, chives and three cornered leeks
  6. Add the salmon and sprinkle with the dried chilli flakes and sesame seeds
  7. Add more teriyaki sauce and serve

Teriyaki Sauce


  • 440g sugar
  • 280g light soy
  • 40ml sake
  • Add 70ml dark soy


  1. Add the sugar, light soy and sake into a saucepan and reduce until caramelized
  2. Add the dark soy and the sauce is ready to use
