Prawn ramen in a white bowl

prawn ramen

serves four


  • 24 large prawns
  • 4 portions of dried egg noodles
  • ½ head of broccoli, sliced
  • 4 large flat mushrooms, sliced
  • ¼ hispi cabbage, sliced
  • 100g Cavalo Nero, de-stalked and sliced
  • One bunch of asparagus, sliced
  • Dried chilli flakes
  • Sesame seeds

You will need one litre of broth. Alternatively, if you are short on time, you can use packed miso soup or vegetable bouillon

Broth ingredients

  • Salmon head and bones - roasted until golden
  • Sea bass head and bones - roasted until golden
  • One onion, sliced with the skin on
  • One stick of celery, sliced
  • One leek, sliced
  • 2 cloves of garlic, sliced
  • Teaspoon of chilli flakes
  • 100g dried Shitake mushrooms
  • 100g dried Kombu seaweed
  • Soy sauce to season


  1. Sweat the onion, celery, leek and garlic
  2. Add the bones and chilli flakes, cover with water and bring to the boil
  3. Simmer for 30 minutes
  4. Turn the heat off and add the Shitake mushrooms and Kombu seaweed
  5. Cover with a lid and leave to cool for 40 minutes
  6. Pass through a sieve and then chill until required

When you have the broth and all the vegetables and prawns ready to go, you can start to prepare the ramen

  1. Bring the broth to the boil and season with soy sauce to your taste
  2. Fill the kettle and bring to the boil
  3. Bring a small pan of water to the boil and place 4 eggs in the pan to soft boil for 4 minutes. Then turn the heat off and leave for a further 2 minutes. Then run them under cold water and peel the eggs
  4. Place the dried noodles into a large bowl, and pour over the boiling water from the kettle. Make sure all the noodles are submerged
  5. Lay out your bowls you are going to serve your ramen in
  6. Add the sliced hispi cabbage raw to the bowls in a neat pile
  7. Then proceed to cook the vegetables separately and pile them around the bowl neatly
  8. Finally cook the prawns
  9. While these are cooking, add the noodles to the bowl
  10. Cut the eggs in half and place in the bowl
  11. Top the vegetables and noodles with the cooked prawns
  12. Pour the remaining broth over the bowl until evenly portioned
  13. Sprinkle with the chilli flakes and sesame seeds

You can mix and match with any meat, fish or vegetables. Feel free to use whatever ingredients you have available for a delicious meal.
