Chocolate and walnut bars


  • 115g butter
  • 175g caster sugar
  • 100g milk chocolate
  • 100g dark chocolate
  • 175g plain flour
  • 4g baking powder
  • 3g sea salt
  • 115g chopped walnuts
  • One egg
  • One teaspoon of vanilla extract


  1. Preheat your oven to 190 degree Celsius
  2. Cream the butter and sugar together until pale in colour. Then add one egg and one teaspoon of vanilla extract. Beat again until combined
  3. Add the remaining ingredients (chocolate, flour, baking powder, salt and nuts)
  4. Pipe into a tin and flatten the top with a wet finger
  5. Top the cakes with extra chopped walnuts
  6. Bake for 20 minutes if in small tins like these, or if using a larger tin add some time
  7. Check if they are fully baked by pushing the tip of a knife into the centre of the mix. If it comes out clean then its cooked. If there’s some cake mix on the knife then put back in the oven for a further 5 minutes and then re-check
  8. Allow to cool in the tin, just lay a tea towel over the top. This helps keep some of the moisture in

top tips

  • You can use a selection of different chocolates or just one variety, so long as they add up to the total quantity
  • Don’t chop the chocolate too small, the larger pieces will create delicious chocolate pockets throughout the cake
  • This is great for a tray bake, just line your baking try with baking paper and fill and smooth the mix as above. Just wait for it to cool (in the tray) before turning it out and cutting it up
  • This is also really good with peanuts, you can replace 20g of butter with peanut butter too!
