
Mediterranean G&T
from the Brumus bar team at Haymarket Hotel
Ingredients
- 40ml Gin Mare (or a gin of your choice)
- 15ml Chase Elderflower
- 10ml homemade rosemary syrup (recipe below)
- 100ml Fever Tree Mediterranean Tonic
- Orange peel and a sprig of fresh rosemary to garnish
Method
- Fill a large glass with cubed ice
- Add all the ingredients apart from the tonic and stir
- Top up with the tonic and give one last stir
- Garnish with orange peel and a sprig of rosemary
for the rosemary syrup
- Use equal measures of sugar and cold water – depending on how much you want to make
- Add to a pan and with a couple of sprigs of rosemary. Warm in the pan until all the sugar is dissolved
- Leave to infuse until the liquid has cooled. Take out the rosemary and keep in a bottle in the fridge for up to a week
